NYCfitfam's Pure Protein Muffins

When George makes these, Mason literally sings "Do you know the muffin man, the muffin man, the muffin man??? I DO, IT'S DAADDDDDYYYYYYY!!!!" They are delicious, vegan, and packed with a protein punch that will help get you through your day. Plus, the dried cranberry and non-dairy chocolate chips makes them feel just indulgent enough to double as dessert. #winning

 

1.5 cups Oat Bran

1 scoop Pure Protein Super Food (Dark Cocoa flavor)

1 scoop Pure Protein Super Food (Vanilla Bean)

/4 cup Dried Cranberries

3/4 cup Non Dairy Chocolate Chips

1/2 Unsweetened Almond Yogurt

1/2 Unsweetened anilla Almond Milk

 

Put all ingredients except the milk in a bowl and begin to stir.  Add milk until the mixture is pasty and you can easily scoop it like ice cream. 

 

Place a scoop, slightly smaller than a handball, in a muffin tin which was sprayed once with cooking spray.  Preheat oven to 350 and bake 20 mins or until a fork would come out clean if inserted. 

 

Take out and let cool, serve (or refrigerate and serve later). 

Should make 12 muffins.
