NUTRITIOUS NOSTALGIA, Recipe #03: Nut-Butter Bars

Comin' in hot, my friends (well, actually, COLD... these babies are NO BAKE!!)


Can’t believe we’re at WEEK 3 of our Nutritious Nostalgia series already… oh how time flies when you’re eating delicious food!!



As a refresh, this series is all about George taking crowd-pleasing comfort foods (your submissions, via DM) and reverse-engineering them to make them healthy + plant-based!


This week’s creation?? GET READY…. they’re yummy, decadent NUT BUTTER BARS!!




The backstory is this: when I was a kid, I went to a camp called Pony Farm, and we ate THE. MOST. DELICIOUS. (most decadent, likely unhealthiest!) Peanut Butter bars ever… as one does when they’re at summer camp!!




...so when my oldest, dearest Pony Farm sista-from-anotha-mista, Kris Young, sent them in as a challenge, George immediately took it on!




We knew we could use the Nutty Infusions line from NOW to make them extra perfect, and we even made them seasonally festive with a little Pumpkin Spice surprise from NOW… wondering what’s in there? Bottom:

1 cup Nutty Infusions™ Roasted Almond Butter

1/4 cup maple syrup

1 cup NOW Real Food® Almond flour

A few drops (to taste) of NOW Real Food® Organic Pumpkin Spice Monk Fruit Sweetener


Top:

1 cup vegan chocolate chips

1/2 cup NOW Real Food® Nutty Infusions™ Salted Caramel Cashew Butter



In a mixing bowl, combine almond butter, maple syrup, Monk Fruit, and Almond flour.

Press mixture into an 8×8 dish.


In two separate bowls, microwave Vegan Chocolate Chips and Cashew Butter for 30 seconds until softened


Mix together and pour on top of the bar mixture, spread evenly. Place in freezer for one hour, remove, cut and serve.



Keep in refrigerator for freshness... if they last that long!!
