George's DIVINE Scrambled Tofu

So I have this thing with tofu... I'm not a vegetarian, but I'm just obsessed with the stuff. I love everything about it and will eat it any which way. One of my favorite finds is discovering new brunch spots that have scrambled tofu on the menu. Nothing revs me up on a Sunday morning more than this!

 

George has always tolerated my obsession, approaching it with trepidation and mild curiosity. He hadn't really eaten it much before meeting me, but the few times he did, he wasn't into it. Whether it was the taste or the texture, it just wasn't his cup of (soy) tea.

 

That said, he's a trooper and always willing to give things a try for the sake of making me happy (swoon). Over the past five years of our marriage, he's tried tofu every which way, and has grown to really enjoy it, when prepared correctly.

 

He was DETERMINED to figure out how to cook my favorite scrambled tofu dish, and he reverse engineered it after eating it several times at some of our favorite restaurants.

 

GUYS... HE NAILED IT.

Here's the recipe he came up with - if you're a tofu fan (or even just a fan of delicious scrambled eggs), I highly recommend you give it a whirl!

 

INGREDIENTS:

 

1 teaspoon Nutritional Yeast

 

1/4 teaspoon Cumin

 

1/4 teaspoon Tumaric

 

1 teaspoon Water

 

1/4 cup Chopped Red Onion

 

1/4 cup Chopped Curly Kale

 

Canola Cooking Spray

 

Pinch of Sea Salt

 

1/4 Clove Elephant Garlic Diced

 

 

INSTRUCTIONS:

 

1) Create paste - using a small mixing bowl:

 

1 teaspoon Nutritional Yeast

 

1/4 teaspoon Cumin

 

1/4 teaspoon Tumaric

 

1 teaspoon Water

 

 

2) In a small pan over med low heat sauté the below ingredients for roughly 2 min:

 

A light layer of cooking spray

 

1/4 clove Elephant garlic diced

 

1/4 cup chopped red onion

 

 

3) Add the following to pan:

 

Crumbled Tofu

 

Paste from above

 

 

4) Mix together and and drop heat to low for 1 min

 

 

5) Add Kale. Mix everything together so the color is rich and spread out then cover for 2min so the kale gets a bit soft but still has a crunch

 

Voila! Ready to go, makes 2 servings.
