Nutritious Nostalgia Series, Recipe #2: Healthy (+ Vegan!) Banana Nut Muffins

Welcome back to Nutritious Nostalgia, our series where my hubby George takes favorite comfort foods submitted by our followers on IG and re-engineers them into a new, healthy, plant-based delicious versions, for your eating pleasure!!!
As a reminder, the first three recipes in this series are being brought to you by our friends at NOW Real Food® which is one of our favorite brands and has just about everything you could ever need to create delicious, dreamy, healthy meals!
And thus.. we are pleased to present the second “Nutritious Nostalgia” recipe: VEGAN, GLUTEN FREE BANANA NUT MUFFINS!!

INGREDIENTS:
3 large bananas
1/2 cup NOW Real Food® Organic Monk Fruit
1 egg (replacement)
1/3 cup vegan butter
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp salt
1 1/2 cup NOW Real Food® Organic Almond Flour
Sprinkle of NOW Real Food® Organic Triple Omega Seed Mix
1/4 cup NOW Real Food® Walnuts, crushed (these can also me left out for nut allergy)
DIRECTIONS:
01) Preheat the oven to 350F
02) In a mixing bowl, add bananas (mashed), monk fruit, egg substitute, butter - mix until combined and smooth. Add the rest of the ingredients and mix.
03) Fill each space in muffin tin 2/3 full. Sprinkle Triple Omega Seed Mix (Hemp, Chia and Flax) on top. This is totally optional, but BOY is it good!)
04) Bake for 20-22 minutes, or until golden brown on top and a skewer comes out clean.
05) Cool muffins for about 20 minutes and transfer to wire rack for another 10 min of cooling
06) ENJOY!
