Nutritious Nostalgia: George’s Famous Vegan Chocolate Avocado Cookies!!

There’s a meme that says “you can’t make everyone happy - you’re not an avocado.” On today’s episode of Nutritious Nostalgia, we’ve joined forces with NOW Foods to challenge that concept… we believe we CAN make everyone happy: those craving “sweet treat comfort foods,” and those who want to nourish their body with healthy ingredients.

We are pleased to present one of our favorite recreations of a naughty recipe-made-healthy: George’s famous Vegan Chocolate Avocado Cookies



And since tomorrow is #ValentinesDay, we’ve partnered with our friends at NOW to sweeten the deal with their Organic Monk Fruit, and we’ll be adding in everyone’s favorite recipe superstar: the Avocado.












Vegan Chocolate Avocado Cookies


Prep Time: 10 mins | Cook Time: 10 mins | Servings: 24


Ingredients:


  • 1 1/4 cups all-purpose flour

  • 1/2 cup vegan chocolate chips

  • 1 teaspoon baking powder

  • 3 TBS NOW Foods® Organic Monk Fruit (1:1 Sugar Replacement)

  • 1/2 teaspoon sea salt

  • 2/3 cup NOW Real Food® Organic Cocoa Powder

  • 1/4 cup NOW Foods® Organic Virgin coconut oil

  • 1 medium mashed avocado

  • 1 teaspoon vanilla extract

  • 1/3 cup almond milk

  • 1 TBS NOW Foods® Organic Chocolate Monk Fruit Sweetener (liquid)





Directions:


  • Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.

  • In a medium bowl, whisk together the flour, baking powder, salt, and cocoa. Set aside.

  • In the bowl of a stand mixer, beat the coconut oil, avocado, and sugar replacement together until creamy and smooth, about 2-3 minutes. Add in the vanilla extract.

  • With the mixer on low, add half of the flour mixture. Add the almond milk and then add the remaining dry ingredients. Mix until the flour disappears. Stir in the chocolate chips.

  • Form cookie dough into tablespoon balls and place on prepared baking sheet, about 2 inches apart. Slightly flatten the cookies with the palm of your hand or a spatula. Bake cookies for 10 minutes, or until set around the edges, but still soft in the center. Let the cookies cool on the baking sheet for two minutes. Transfer to a wire cooling rack and cool completely.
